Healthy Homemade Granola

If there is one thing I love, it’s a quick and easy meal.  Anything that is simple, healthy, and delicious instantly has my heart. But what’s more, if it’s incredibly easy to make, then I am all in! 

In 2008, I adopted a vegan lifestyle at the recommendation of a nutritionist I worked with.  I was having gut issues and headaches, so he suggested cutting out gluten and dairy, primarily, and adopting a full plant based lifestyle.  I have to say, I loved it!  

Since this was new territory for me, I needed to find easy, edible choices that fit my gluten free and dairy free guidelines.  That year for Christmas, I received several vegan cookbooks to help me on my journey. By far, the best one of the bunch was Alicia Silverstone’s The Kind Diet.  Not only were the recipes delicious, the overall education and message the cookbook offered its readers spoke to my heart.

Although I am not currently vegan, I still refer to this cookbook quite a bit!  The recipes are accompanied with beautiful photos (I’m definitely one of those people that NEEDS photos in a cookbook to even consider using it) allowing you to see what you’re about to create.  

After trying most of the recipes, this homemade granola recipe has won me over because it tastes so yummy, costs very little, doesn’t require wasteful packaging, and is easy to make! 

I had to adapt it from the original version to make it gluten free, but that was a simple tweak. If you have specific food intolerances or allergies, this recipe is very adaptable.  For instance, if you don’t like coconut, you can easily leave that out or choose another alternative like crumbled nuts.

So, are you ready to try it for yourself?  I promise you, you’ll fall in love!

If my picky 4 year old, my food-loving husband, and my gut-sensitive self gobbles it up, it’s sure to please pretty much ANYONE.  

So let’s get into how to make this super simple homemade granola!

Healthy homemade granola


6 cups gluten free rolled oats

½ cup maple sugar (I get mine from Thrive Market)

¾ cup ground flaxseed

½ cup shredded coconut

½ cup sunflower seeds

1 cup chopped nuts or raisins

½ cup safflower oil

1/3 cup maple syrup

1 ½ teaspoons vanilla extract


Preheat oven to 350 degrees.

Evenly spread 6 cups of rolled oats onto baking sheets (I use two rimmed baking sheets)

Place in oven for 10 minutes to lightly brown

Transfer oats to a large mixing bowl and add the sugar, flaxseed, coconut, seeds, and nuts/raisins. Stir to mix well.

Then add the oil, syrup, and vanilla extract.  Mix everything until moistened.

Spread half of the mixture on each of the baking sheets (or bake in two batches) and bake for 10 minutes. Stir after 5 minutes to brown evenly.

Doesn’t your home smell sensational while this granola is cooking? I mean, c’mon!

Healthy Homemade Granola

Once everything is cool and ready to be stored, grab a glass container such as large mason glass (or two or three) and tightly close.  When you’re ready you can eat the granola plain, with yogurt or your favorite nut milk, or as a topping to your favorite smoothie bowl!  Add some fresh fruit on top and you’re in for the most wonderful treat!

Twenty minutes is all it takes to make a big batch of this homemade granola.  Like I said before, you don’t have any wasteful packaging to throw away and it’s a heck of a lot less expensive than buying overpriced granola at the store.  

So go ahead, heat up that oven of yours and get baking!  You’ll have granola for days (or maybe not depending on HOW much you love it)!
